Gluten Free Protein Pancakes

If you’re looking for a fluffy, filling and delicious higher protein pancake WITHOUT using protein powder - give these a whirl!

Ingredients:

20g almond meal

14g gluten free plain flour

½ cup egg whites

½ tsp baking powder

50g plain greek high protein yoghurt

Pinch of cinnamon

½ cup raspberries

Directions:

Mix almond meal, GF flour, egg whites and baking powder until well combined. Don’t be afraid of how runny the mixture is!

On medium heat in a non-stick pan fry the pancakes and turn as bubble holes appear. The mixture is runny, be patient, it will fluff up. 

Serve with Greek yoghurt, a pinch of cinnamon, then top with raspberries or any other berries you like. Enjoy!
